Southwest White Chicken Chili

Makes 4 one cup servings.
Serve with a green salad and crusty french bread.  Great on a snowy evening.

Ingredients
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon cilantro
1/8 to 1/4 teaspoon red pepper
1 Tablespoon olive oil
1 lb. boneless, skinless chicken - cubed into 1/2" cubes
1/4 cup chopped onion
1 cup chicken broth
1 can (4 oz.) green chilies - un-drained
1 can white kidney beans (could use cannellini beans) un-drained
Garnish: cheese and scallions

Directions
Mix spices, set aside.
Cook chicken in oil 4 - 5 minutes.  Remove from pan and keep warm.
Add onion to pan and cook 2 minutes.  Add broth, chilies, spices and simmer 20 minutes.
Add chicken and beans.  Simmer uncovered for 10 minutes
Spoon into bowls and garnish with cheese and scallions
