Asparagus Roll-Ups

Submitted by: June Shockley
This is an oldy but a goody.  Use fresh asparagus no thicker than your pinky for best results.  This is a great recipe when asparagus is in season.
Note:  I think this would also be good if you substituted Crescent Rolls for the bread and just baked according to instructions on the package.

Ingredients
10 spears of fresh asparagus
10 slices of good quality bread
1 cup Cheese Whiz
1/4 cup melted butter
Fresh Parmesan cheese, finely grated

Directions
  • Clean, steam until just tender, and then dry off the asparagus spear.
  • Trim to width of bread
  • Trim crust off 10 slices of bread and flatten with a rolling pin.
  • Spread each slice with Cheese Whiz
  • Place a spear of asparagus on each slice and roll up.
  • Brush each roll with melted butter.
  • Roll each roll in grated Parmesan cheese.
  • Cut each stalk into 2 or 3 pieces depending on the size of the bread. You may need a toothpick to hold them together.
  • Place on parchment covered baking sheet
  • Bake at 350 for about 10 minutes.
