Peppermint Bark

I saw this on a Rachael Ray episode years ago and I've made it ever since.  This makes a great hostess gift.  I just put it in a decorative tin or a clear cellophane bag with a ribbon.

Ingredients

  • 1 bag white chocolate chips (11 ounces), such as Nestlé brand
  • 3/4 cup crushed candy canes or peppermint candies, divided – my grocery store sells these in the bulk section – a total time saver
  • 1/3 cup crushed chocolate wafer cookies (optional) – I use Famous Chocolate Wafer brand and will add them only when I have them on hand just to gild the lily; the bark is just as delicious without cookies
  • 1 teaspoon mint extract
  • 8 ounces bittersweet chocolate chips, such as Ghirardelli brand

Preparation


  • Line a sheet pan with parchment paper. 
  • Melt the white chocolate chips in a microwave-safe bowl, carefully checking and stirring the chocolate every 30 seconds or so to avoid scorching. 
  • Once melted and smooth, immediately stir in the mint extract, 1/2 cup of the crushed candies and the crushed cookies, if you are using the cookies. 
  • Immediately pour the mixture onto the prepared pan and spread evenly 
  • Refrigerate until firm.
  • Once the white chocolate is firm, make the top layer. 
  • Melt the bittersweet chocolate in a microwave-safe bowl, checking and stirring every 30 seconds or so to avoid scorching. 
  • Once melted and smooth, spread the bittersweet chocolate evenly over the white chocolate. 
  • Sprinkle the remaining 1/4 cup of crushed peppermint candies on top.
  • Refrigerate until firm. Break into pieces and store in the refrigerator.
