Here is a delicious two for one recipe; salmon and Orzo.
Here is a delicious two for one recipe; salmon and Orzo.
Ingredients
½ cup pesto
4 salmon fillets with or without skin approximately 6 ounces
each
Salt and pepper
½ cup dry white wine
Grated Romano or Asiago cheese
Directions
- Season salmon with salt and pepper.
- Place fillets in baking dish skin side down.
- Cut a slit into each portion with a sharp knife ¾ of the way top to bottom to make a pocket.
- Fill with pesto. Pour wine around the fillets and bake at 400 for 10 minutes.
- Remove from the oven; top with grated Romano or Asiago cheese.
- Return to oven until cheese is melted and salmon is done, approximately 5 minutes.
Orzo Pasta with Tomatoes and Pesto
Ingredients
1 cup orzo pasta-cook according to package directions, drain and keep warm
2-3 fresh small tomatoes or 1 large-diced
Olive oil-2 Tbsp.
½ cup sundried tomatoes-chopped
¼ cup pesto
1 Tbsp. Balsamic vinegar
Chopped fresh basil to taste
Toasted pine nuts
Grated Romano or Asiago cheese
Directions
- Sauté diced tomatoes quickly in olive oil.
- Add sundried tomatoes, pesto and Balsamic vinegar.
- Toss with cooked pasta and season with salt and pepper to taste.
- Spoon into serving dish and top with fresh basil, toasted pine nuts and grated cheese.
- Enjoy with Pesto Stuffed Salmon.
