Pesto Stuffed Salmon and Orzo Pasta

Here is a delicious two for one recipe; salmon and Orzo.

Ingredients
½ cup pesto
4 salmon fillets with or without skin approximately 6 ounces each
Salt and pepper
½ cup dry white wine
Grated Romano or Asiago cheese

Directions
  • Season salmon with salt and pepper. 
  • Place fillets in baking dish skin side down. 
  • Cut a slit into each portion with a sharp knife ¾ of the way top to bottom to make a pocket. 
  • Fill with pesto. Pour wine around the fillets and bake at 400 for 10 minutes. 
  • Remove from the oven; top with grated Romano or Asiago cheese. 
  • Return to oven until cheese is melted and salmon is done, approximately 5 minutes.

Orzo Pasta with Tomatoes and Pesto


Ingredients
1 cup orzo pasta-cook according to package directions, drain and keep warm
2-3 fresh small tomatoes or 1 large-diced
Olive oil-2 Tbsp.
½ cup sundried tomatoes-chopped
¼ cup pesto
1 Tbsp. Balsamic vinegar
Chopped fresh basil to taste
Toasted pine nuts
Grated Romano or Asiago cheese

Directions
  • Sauté diced tomatoes quickly in olive oil. 
  • Add sundried tomatoes, pesto and Balsamic vinegar. 
  • Toss with cooked pasta and season with salt and pepper to taste. 
  • Spoon into serving dish and top with fresh basil, toasted pine nuts and grated cheese. 
  • Enjoy with Pesto Stuffed Salmon.
