Laurie served this at a meeting and had tons of requests. She found the recipe in

STRAWBERRY ORANGE SPINACH SALAD
10 ounce package fresh spinach
3 cups fresh strawberries, washed and hulled
11 ounce can Mandarin oranges, drained
3/4 cup walnut pieces (toasting them adds more flavor)
Wash spinach if unwashed in packaging. Tear into bite size pieces and place in salad bowl. Add strawberries cut in half. Add Mandarin oranges. Toss gently. Refrigerate covered. When ready to serve toss with Poppyseed dressing (recipe follows) and garnish with walnuts.
For the luncheon, I also added fresh blueberries and had grilled chicken strips, thinly sliced Vidalia onions and crumbled blue cheese available!
The dressing goes well with
POPPY SEED DRESSING
6 tablespoons sugar
1/2 tsp. dry mustard
1/4 tsp. salt
3 tablespoons cider vinegar
1 cup salad oil
2 tablespoons poppy seed
Combine sugar, mustard, salt and vinegar in blender. With motor running add oil slowly and continue mixing until thickened. Add poppy seeds and process a few seconds. Refrigerate until ready to use. (A whisk may be substituted for the blender!)
