Ingredients
- 2 seedless cucumbers peeled and sliced in half length wise, remove seeds, if any, and then cut into bite size chunks.
- 4 T. sugar
- 1/2 cup water
- 5 T. white vinegar
- 1/4 t. salt (optional)
- 3 shallots chopped or 1/4 cup sweet onion diced
- Sprinkle with chili pepper flakes to desired hotness
- Heat sugar and water in saucepan to dissolve sugar.
Remove from heat and add vinegar and chili flakes, pour over cucumber mixture. Chill at least 1 hour, best overnight.
