Sweet and Sour Cucumber Salad

Ingredients
  • 2 seedless cucumbers peeled and sliced in half length wise, remove seeds, if any, and then cut into bite size chunks.
  • 4 T. sugar
  • 1/2 cup water
  • 5 T. white vinegar
  • 1/4 t. salt (optional)
  • 3 shallots chopped or 1/4 cup sweet onion diced
  • Sprinkle with chili pepper flakes to desired hotness
Directions
  • Heat sugar and water in saucepan to dissolve sugar.
    Remove from heat and add vinegar and chili flakes, pour over cucumber mixture.  Chill at least 1 hour, best overnight.
