Pickles

This is a fun little project for an afternoon.  A jar of these pickles make a wonderful  take a long hostess gift in the fall.  I made them with "green" green pepper, but you could make them with any color of green pepper.  I love them!

Pickles
Ingredients:

7 cups unpeeled pickling cucumbers, sliced medium or as you like
1 cup coarsely chopped onion
1 cup sliced green pepper (any color will do)
1 Tbsp. salt
1 cup white vinegar
1 cup sugar
1 tsp celery salt
1 tsp mustard seed
optional 1 Tbsp red pepper flakes, this gives it ZING, if you like things hot!

Directions:
  • Combine cucumbers, peppers, onion, salt and set aside
  • In a saucepan bring to boil vinegar, sugar, celery seed, mustard seed, (optional red pepper flakes. Remove from heat and let cool one hour.
  • Place cucumber mixture in jars, pack tightly.
  • Pour cooled vinegar mixture into jars.  Wipe lip of jar with damp cloth.
  • Cover jars and refrigerate.  These pickles have not been "canned" so they need to be refrigerated.  They will keep up to 2 months in the frig.
  • Makes about 4 pint jars.
