Darlin's Hot Bread and Butter Pickles

Darlin's Hot Bread and Butter Pickles

These were served at the Moor's.  Fantastic

Ingredients  (one-fifth recipe)

1 case (50lbs) pickling cucumbers    (10 lbs)
2  1/2 gallons distilled vinegar  (2 quarts)
12 quarts sugar (10 cups)
1  1/4 cups pickling spice (1/4 cup)
1 cup salt (4 Tablespoons)
1 cup crushed red pepper (1/4 crushed red pepper flakes)

Directions
Day 1  Cover cucumbers with boiling water
Day 2  Strain and repeat
Day 3  Strain and repeat
Day 4  Strain and repeat
Day 5  Slice into 1/2 inch slices.  Combine vinegar, sugar, pickling spice, salt, and crushed red pepper and bring to a boil.  Pour over pickles and let sit for two days.  You can place in jars and refrigerate or you could can them in mason jars.
