Amish Cinnamon Quick Bread

This is a wonderful quick bread to enjoy on Christmas morning.
Makes 2 loaves

Ingredients

Mix dry ingredients together 

  • 3 3/4 cups all-purpose flour
  • 3 cups sugar
  • 1 T. cinnamon
  • 1/12 t. baking powder
  • 2/4 t. baking soda
  • 3/4 t. salt
Combine liquid ingredients and then add to dry
  • 3 beaten eggs
  • 1  3/4 cups whole milk
  • 1 1/3 cups oil
  • 1 t. vanilla

Directions

Baste bottoms of 2  8x4 1/2 loaf pans ( I like to line bottoms and 2 sides with parchment paper.
Mix 2 t. sugar and 1 t. cinnamon together and sprinkle on bottom and sides of pans. Reserving some for top.
Fill pans evenly
Sprinkle remaining sugar/cinnamon mixture over top.
Bake 350 for about 1 hour.  Check to see if done by inserting a toothpick, it should come out clean.  The top probably has a crack if it is done. Remember, you can serve a slightly over-baked bread, but you cannot serve raw, under-baked bread.  But, at the same time try not to over-bake.
