 Easter: Party –Time Potatoes

4 large baking potatoes

 Vegetable oil 

1/2 sour cream 

1/4 cup + 2 TBL Butter

 3/4 salt Dash pepper 

2 eggs ( I sometimes use only 1 egg) 

1 TBL Chopped chives or 1 tsp Grated onion

 1/2 cup Sharp Cheddar, shredded 

Directions:
 Scrub Potatoes Rub with oil and bake 425 minutes for 1 hour
 Cut in half lengthwise, scoop out pulp Mash potatoes until lumps are broken
 Add sour cream, butter, salt, pepper, and egg (s) & chives
 Whip until light and fluffy
Spoon into shells or flute using a pastry tube.
Sprinkle with cheese
 Bake 425 for 10 minutes or until the tops are lightly brown.
Can be made ahead, but may have to increase the time in the oven to 20-30 minutes. Enjoy!
