 Sandy Borsos Spaghetti Sauce

For my own sauce, I usually make a streamlined version of what my Mom did.  I use ground turkey and onions to make the sauce a meat sauce.   

 

My Mom usually used San Marzano crushed tomatoes which you can get canned. I know Amazon has them which makes it easy now.   But then your sauce will have tomato pulp or pieces in it.  Some people prefer more of a smooth tomato sauce.  Well when I was first married it was hard to find San Marzano tomatoes. So I make the smooth version.  The sauce I use already has some salt, enough for us,  plus a hint of onion and spice but not very much so I add to it.   I will tell you what I do, I don't have a recipe exactly, I just make it! 

 

So I have sauce left to freeze for another meal I usually make a bigger batch.  I use:

 

-2 cans (28 oz each) of Dei Fratelli  Tomato sauce ( not Italian sauce, it just says Tomato Sauce) 

 

-1/2 Tablespoon olive oil 

 

-one medium onion chopped

 

- I use one pound of Jennie O Lean (93/7) ground turkey or you can use ground beef 

 

-one medium peeled carrot cut in half for flavor for the sauce or can use 5 or 6 baby carrots 

 

- one celery rib (with top leaves on, those add flavor) the rib is cut in half or thirds for flavor

 

- 1 peeled and crushed garlic clove.  (If you love garlic you can use 2 cloves, I just use one clove)  

 

- about one teaspoon (or more) of dried basil 

 

- a few twists of the fresh ground pepper mill 

 

- splash of red wine if you have any is always a nice addition but you don't need it. 

 

Freshly grated Parmesan cheese to serve on the pasta with sauce.  ( no green can Parmesan cheese allowed!😊

 

To make sauce:

 

- Heat 1/2 Tablespoon of olive oil in a large ( 5 or 6 quart ) pot.  Add chopped onion and brown a few minutes. Add ground turkey and brown. Pour off extra fat when browned. ( yes I know there was olive oil that will be poured off but it makes the onion taste better I think! ) 

 

- Add the 2 (28 oz) cans of sauce.   Add the 1 or 2 peeled and crushed cloves of garlic, carrot and celery.  (Carrot and celery are for flavor, you will toss those out when the sauce has finished simmering) 

 

-Add the fresh ground pepper and the dried basil. Stir. Can add a splash of red wine if you want then too.  Cover and simmer on low for about 45 minutes to develop flavor.  Then remove the carrot and celery and toss them out.  Taste and see if you want more salt or basil. If you do, add some!  That's it!  

  Makes enough for 2 pasta dinners using a One pound box of pasta for each dinner.  ( so 4 normal size bowls of pasta) We don't use a ton of sauce on our pasta.  If you love lots of sauce then this may make enough for about 3/4 of a pound box of pasta!  Americans like more sauce on pasta than Italian families do
