Mini Cream Cheese Tarts

These make a fantastic presentation.  You will get a rave review for a simple dessert.
Mini Cream Cheese Tarts

Ingredients
  • Phyllo shells - found in freezer section by pie shells
  • Semi-sweet baking chocolate - enough to dip shells
  • 8 oz. cream cheese - softened
  • 1/2 c. sugar
  • 1 t. vanilla
Instructions
  • Melt chocolate in microwave (stir after every 20 seconds.  (Be careful not to burn, once it curdles it is ruined beyond repair.)
  • Dip shells in chocolate and allow to harden. 
  • Beat cream cheese, sugar, and vanilla until well blended.  Place mixture in a gallon Ziploc bag (snip the corner) and squeeze cream cheese mixture into the shells.
  • Top with fruit such as raspberries, strawberries, kiwi slice, chocolate kiss, or whatever you would like.
  • Yield 30 tarts
