Oven Caramel Popcorn

Caution, this is addictive!

You will need:
Hot Air Popper
Big roasting "turkey" pan

Ingredients:
15 cups popped corn (about 1 cup un-popped)
1 stick butter
1 cup packed light brown sugar
1/4 cup Karo light corn syrup
1/2 tsp. salt
1/2 tsp. baking soda (don't put in until the end)

Instructions:
  • Preheat oven to 200 degrees.
  • Pop popcorn and put in roasting pan.
  • In a medium-sized heavy saucepan, combine brown sugar, corn syrup, butter and salt. Cook over medium heat, stirring occasionally to dissolve the sugar. When mixture turns bubbly, cook for another 5 minutes, stirring frequently.
  • Remove the pan from heat and stir in baking soda and mix thoroughly
  • Careful,..the mixture is extremely hot! Pour the mixture over the popped corn and stir to coat evenly.
  • Place popcorn in oven and cook for 1 hour, mixing every 15 minutes until evenly coated.
