Pineapple Pie

My dear friend from North Carolina gave me this recipe.  It is so o o refreshing on a hot afternoon.

Ingredients
Large can crushed pineapple with juice
1 pkg. instant vanilla pudding
Medium container Cool Whip - thawed. (Save half for pie topping)
1 graham cracker crust
1 maraschino cherry (optional)

Directions

  • Whip instant pudding with the juice from the pineapple until thick
  • Fold in pineapple and Cool whip
  • Place in prepared graham cracker crust pie shell
  • Top with the other half of the Cool Whip
  • Garnish with a few graham cracker crumbs and a cherry in the middle.
  • Refrigerate
