Lime Shrimp and Avocado Salad

This looks so yummy.  It is not even summer yet and I just have to try it.  I am going to make it tomorrow.  I do not care if it is only 7 degrees outside.  I might even put on a little sun screen just to get in the mood.

Lime Shrimp and Avocado Salad


Ingredients
1 lb medium cooked shrimp, peeled and deveined,
(I bought frozen cooked shrimp with tails off)
3 medium tomato, diced
(I removed seeds and after they were diced I added some ground pepper)3 avocado, diced
1 jalapeno, seeds removed, diced fine
(Add more or less according to how hot you want it.)
1/4 cup chopped red onion
3 fresh limes, juice of
1 tsp olive oil
2 tbsp chopped cilantro
(more or less to taste)
salt and fresh pepper to taste
ü    I added about 1/3 cup sugar into bowl then I started adding about ¼ cup balsamic vinegar.  I just added a little at a time until it tasted right to me.
ü    I also added about 1 cup of diced fresh pineapple because I thought it added a little sweetness
ü    I think you could turn this into a shrimp taco or you could add some romaine lettuce to turn it into more of a salad.
ü    I offered stand up taco shells as a convenient way to eat it and/or some blue corn chips.

Directions
In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.

In a large bowl combine shrimp, avocado, tomato, jalapeno, fresh pineapple. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.
ü    After I tasted this I thought it was a little bland so this is where I added the sugar and balsamic vinegar.
