Mini Chocolate Swirl Cheese Cakes

Mini Chocolate Swirl Cheese Cakes


Spray mini cupcake tins or use paper liners preheat oven to 350 degrees

Ingredients for first part (brownie base)
1/2 cup plus 2 T unsalted butter
1 1/4 cup sugar
3/4 cup plus 2 T unsweetened cocoa powder
1/4 kosher salt
1 t. vanilla
2 eggs, cold
1/2 cup flour
 3/4 cup semi-sweet chocolate chips

Directions
Melt butter
combine sugar, cocoa, salt
add butter to dry ingredients., add vanilla, mix well.
Add eggs one at a time, incorporating it each time Add flour and mix. Fold in chocolate chips.  SET ASIDE

Ingredients for cheese cake filling
In separate bowl whisk together:

8 oz. soft cream cheese
1/4 cup plus 2 T sugar
1/4 t. vanilla
1 egg yolk

Spoon about 1 T of Brownie batter into muffin tin. Add about 1/2 T of cheesecake batter. Use knife to swirl into batter.
Bake 15-20 minutes till toothpick comes out clean.
Cool before removing from tins.
