Coconut Banana Creme Pie
Submitted by: June Shockley
My good friend, Dee Fitzsimmons gave me this quick and yummy recipe that she created herself. I love the crust idea. I think it would be great with chocolate pie too.
Here is a quick dessert recipe for you!
Coconut-Banana Creme Pie
Crust: melt real butter in frying pan and add sweetened shredded coconut.
Stir until browned and toasted.
Press immediately into a pie pan, as this serves for the crust of the pie. It will firm up and does not require baking.
Filling:
Fix package of vanilla pudding. (not instant) Cook as for pie and when thickened, cover with saran until cool.
Slice bananas into pie shell
Mix one small tub of cool whip into cooled pudding.
Reserve a dollop of cool whip for decorating top of pie.
Pour pudding/cool whip mixture into pie shell covering bananas.
Add dollop of creme in center of pie and sprinkle a little coconut on top of it.
Refrigerate. Yummy!
