Pumpkin Pie Cake

Pumpkin Pie Cake


1 box butter or yellow cake mix (reserve 1 cup and set aside)
1 30 oz can pumpkin pie mix (make sure it's the mix and not the puree)
3 eggs
1/2 c. melted butter
2/3 c. evaporated milk (1 small can)
3/4 t. vanilla
1 1/4 t. pumpkin spice seasoning (optional)
1/2 c. sugar
1 t. cinnamon
1/2 c. hard butter
1/4 c. flour

Mix melted butter with remaining cake mix and 1 egg.  Place in greased rectangular 9x11 inch pan Mix pumpkin pie seasoning, pumpkin pie mix from can, vanilla, 2 beaten eggs, and evaporated milk.  Pour over first layer.  Take reserved dry cake mix and cut in hard butter, sugar and cinnamon.  Add flour to make crumbly.  Sprinkle on top.  Bake at 350 degrees for 55-60 minutes.  Crumbs on top should look golden brown.  Cool completely.  Serve with whipped cream (real, of course:) or vanilla ice cream -- or both!!  Serves at least 12. 

Note:  I used 1 cup melted butter by mistake once and thought I ruined it.  I did NOT ruin it -- it was more buttery than ever!  But it's a lot of calories that way.  Also my directions say bake 45 - 50 minutes, but that was never enough in my oven.  I baked it for 60, but you might want to start checking at 45 minutes.
