Marinated Mixed Vegetable Cold Salad

Served at the P.E.O. Christmas luncheon.  Very well liked!

Marinated Vegetables

Cut the following into bite size pieces:    
1 red pepper 
I large bunch of broccoli 
1 head cauliflower
1 green pepper                                            
1 large onion
1 carton grape tomatoes.
1 cucumber (add at end, may get mushy if left in marinate too long)

Drain and add to fresh vegetables:
1 can green beans
1 can wax beans
1 can kidney beans
1 can small black olives
1 can artichoke hearts
1 can heart of palm 

Dressing, boil together:
1 1/2 cup canola oil
1 cup vinegar
1 cup sugar
1 Tablespoon dry mustard
1 Tablespoon dill weed
1 Tablespoon salt
! teaspoon black pepper
a pinch of crushed red pepper


Pour dressing over vegetables, cover and marinate in refrigerator for 24 hours.  I use a large stainless steel bowl and mix a couple of times while marinating. I don't put the cucumber in the marinade as it tends to get slimy   None of this is written in stone, so alter what ever suits you.  This keeps for several days.
