Nana's Fluffy Pancakes

I made these pancakes with my granddaughters, Kinsey and Emerson, and everybody loved them.

Ingredients

2 cups flour
3 T sugar
 4t baking powder
1.2 t baking soda
some salt

2 eggs
1 1/2 c milk
1/4 c vegetable oil
1/2 t vanilla

Directions

Combine all dry ingredients  set aside
Combine all wet ingredients  set aside
Add wet ingredient mixture to dry ingredient mixture
Stir just until all ingredients are combined.  There may be some small lumps. These will moisten.
Allow batter  to sit for 10 minutes
Preheat skillet or griddle to 350. lightly grease with butter.
Try one small test pancake.  Flip when air bubbles form about 2 1/2 min.  Flip and allow the pancake to cook for an additional 2 min. (about)

While pancakes are on the griddle you may want to add fruit, such as blueberries, peaches, bananas, etc.  And, if you are the NANA you may also add whipped cream and make it a party!

If you are making a large number of pancakes you can keep them warm on a wire rack in a 200 oven for a few minutes while the rest cook.

Of course, serve with Vermont maple syrup and butter.  Yummy
