Laurel's " Company's Comin' " Carrot Cake
Mix dry ingredients together well
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
2 cups of sugar
1 cup walnuts or pecans (optional)
1/2 cup golden raisins (optional)
Mix well
1 1/2 cups oil
4 eggs
add to wet ingredients
3 cups grated carrots
Mix wet and dry ingredients together.
Pour into greased 9 x 13 cake pan, 0r two 9" cake pans (I line the bottom of pans with parchment.)
Bake at 350 for 1 hour. Every oven is a little different test for doneness close to the end of baking time.
Cream Cheese Frosting
8 oz. softened cream cheese
1/2 cup softened butter
2 tsp vanilla
1 box powdered sugar.
Directions
Whip cream cheese, butter, and vanilla together until smooth
Stir in sifted powdered sugar and beat until smooth
Optional: Stir in 1 1/2 c coconut and/or garnish frosting with 1/2 cup walnuts or pecans
