Bacon Cheddar Pepper Poppers

Recipe:

4oz Cream Cheese
1/4 Cup Cheddar Cheese
3 Slices of Cooked and Crumbled Bacon

Clean and halve peppers (we love the small pepper poppers)

Spoon in cheese mixtures Bake 400 degrees for 7-10 minutes

We filled an entire bag of pepper poppers. The size of mini bell peppers range considerably! Generally, they’re about 1 carb per pepper. The macros here are for 2 peppers, or 4 pieces (if you’re cutting them in half). Generally enough for 8 people, but the size ranges based on how big the peppers are in the bag you buy!

The Keto Dad Tips and Tricks:

  • You can serve these warm or cold!

  • If you’re grilling, just add them to the grill for about 5 minutes

  • If you just want to make a few, make the batch of filling, then only fill and cook the ones you’ll eat. Once you cook the, they’re not as good to reheat.

  • We love cooking up an extra batch of bacon and leaving it in the freezer to crumble for our next recipe!
