Stuffed Cornbread

 Stuffed Cornbread

This makes a 9x13 Casserole

Preheat oven to 400 degrees

Ingredients: (this serves a lot!)

1 medium onion 1 bell pepper chopped 1 lb ground beef or ground pork or beef 4 boxes of Jiffy Cornbread, made per directions 1 pkg taco seasoning mix 1/2 can black beans drained, rinsed 1/2 can corn drained 1 can Rotel, undrained (can use diced tomatoes if you don't want spice) Optionally add a couple of cups of fresh baby spinach 2 cups cheese, I like pepper jack, for cornbread, plus a little for sprinkling on top

Directions

Prepare Jeffy mix according to directions on pkg. Let the batter sit while you make the filling.

In a skillet brown onion and bell pepper until soft. and ground meat and brown thoroughly. Add taco seasoning packet, black beans, corn,, and Rotel. If you like spice you could add some jalapeno. To add some nutrition add some fresh baby spinach and let it wilt in the skillet.

Construction

Thoroughly spray a 9x13 baking dish with olive oil.

Layer #1

Add 2 cups of pepper jack cheese to the cornbread batter. Then, spread half the batter on bottom of baking dish.

Layer #2

Spoon on skillet contents and spread evenly

Layer 3

Spread the remaining cornbread mixture on top  Sprinkle with additional cheese if you like.

Bake at 400 for about 20-25 min.  Watch to see if the cornbread is firm, baking time may vary.
