Cranberry Nut Bread

CRANBERRY NUT BREAD

1 orange, peeled and cut up(remove zest before cutting if using fresh zest)
1/2 cup boiling water
2 TB. melted butter
1 egg
1-2 TB. orange zest(zest of 1 orange) or 1 tsp. Minced Orange Peel
1 cup sugar
2 cups flour
1/2 tsp. salt
1/2 tsp. baking soda
1 cup fresh or frozen cranberries, whole
1/2 cup pecans, broken roughly
Preheat oven to 325. Grease a 9x5 loaf pan and set aside. Toast pecans by placing in a skillet over medium heat
and cooking 5-10 mins. tossing often until they are glossy brown and smell fragrant. In a blender, combine the
orange, boiling water, melted butter and egg. Puree 2 mins.. Pour into a large mixing bowl. Add the orange zest
and sugar and mix well. Gradually add flour, salt, and baking soda and mix well. Fold in cranberries and toasted

pecans. Pour into loaf pan. Bake at 325 degrees for 1 hour.
