This recipe is from Lynn Damson of Portage United Church of Christ, SILVER SERVINGS Cookbook from years ago! I still love the recipe and make these for special occasions!
Turtle Cookies
Makes 3-4 dozen
Crust:
2 cups flour
1 cup firmly packed brown sugar
1/2 cup margarine or butter
Caramel layer:
2/3 cup butter
1/2 cup firmly packed brown sugar
2 cups pecan halves
1 cup chocolate chips
In bowl or food processor, combine crust ingredients and mix until particles are fine. Pat frimly into ungreased 13X9X2" pan. Sprinkle pecans over unbaked crust. Prepare caramel layer and pour evenly over pecans and crust. Bake at 350 for 18-22 minutes or until layer is bubbly and crust is light golden brown. Remove from oven and immediately sprinkle with chips. Allow chips to melt slightly 2-3 minutes and then swirl chips as they melt, leaving some whole for a marbled effect. Do not spread chips. Cool completely. Cut into small bars.
Caramel layer:
In 1 quart saucepan mix brown sugar and butter.
Cook over medium heat, stirring constantly until entire surface of mixture
begins to boil. Boil 1/2 to 1 minute stirring constantly.itted by: Laurie Burdo
