Turkey Spinach and Bell Pepper Stir Fry

INGREDIENTS

  • 2 tablespoons olive oil
  • 4 ounces turkey breastsliced
  • 1 garlic
  • 2 tablespoons green onions
  • 1/4 cups red bell peppersliced
  • 1/4 cups green bell peppersliced
  • 2 tablespoons cashewschopped
  • 1 tablespoon lemon juice
  • 1 cup baby spinach

DIRECTIONS

Heat a skillet over medium high heat. Add the olive oil and the turkey breast and sear until turkey is browned. Remove from the pan and add the garlic, green onions, and bell peppers. Stir until crisp tender, and add the lemon juice. Add the turkey back to the pan, along with the spinach. When the spinach is wilted, stir in the cashews and serve.
