Raspberry and Jalapeno Chicken Salad
INGREDIENTS
- 1 cup chicken breast, chopped
- 1/4 cups onions, chopped
- 1 jalapeno pepper, finely chopped
- 3 tablespoons paleo mayo
- 2 tablespoons lime juice
- 2 tablespoons fresh cilantro, chopped
- 1/2 cups fresh raspberries
- 1/8 teaspoons salt
- 1/8 teaspoons pepper
DIRECTIONS
Combine everything but the raspberries in a bowl and mix well. Season with salt and pepper. Carefully stir in the raspberries, being careful not to mash too much. Chill until ready to serve.
