Texas Cadillac Salsa


This is a crowd favorite!

Ingredients:
  • 1 red pepper (core and clean and dice real thin)
  • 1 green pepper (core and clean and dice real thin)
  • 1 orange pepper (core and clean and dice real thin)
  • 1 red onion, diced
  • bunch of cilantro
  • 1 can white corn
  • 1 can black beans (drain and rinse)
  • 1 can red kidney beans (drain and rinse)
Mix all veggies and beans in a bowl.
Mix the following items and bring to slight boil:
1/2 cup cider vinegar
1/2 cup sugar
1/4 cup canola oil
Pour over veggie and bean mixture.
Put in the fridge for 6-24 hours.  Use within 3 days.
Serve with Tostito Lime Chips.
