Cranberry Chutney

This recipe makes 1 qt.  Package in small jars and give as holiday hostess gifts.  Keep refrigerated.

Ingredients
1 20 oz. can pineapple tidbits or chunks
2 cups of sugar
4 cups fresh or frozen cranberries
1 cup golden raisins
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon salt
1 cup chopped walnuts

Directions

  • Drain juice from pineapple into a saucepan.  Set pineapple aside.  Add sugar, raisins, cranberries, spices, and salt to pineapple juice.
  • Heat to boiling: lower heat and simmer for about 25 minutes, until thick, stirring occasionally.
  • Add reserved pineapple and walnuts.
  • It can be cooked in microwave-safe 2-quart bowl.  Microwave at 100% power for 10 - 12 minutes until thick, stirring two or three times.
