Old Fashioned Custard Pie

My friend, Jan Foley, makes this pie and it is one of my favorites.  This pie is so good you need to think about making two and adding 1 cup coconut to one of them.  Yum!

Ingredients
1 9" unbaked pastry shell (chilled)
4 slightly beaten eggs
1/2 cup sugar
1/4 teaspoon salt
12 teaspoon vanilla
2 1/2 cup whole milk, scalded
Nutmeg

Directions
  • Chill pie shell while making filling.
  • Blend eggs, sugar, salt, vanilla
  • Gradually stir in scalded milk (careful not to cook eggs with hot milk)
  • Pour into pie shell.
  • Sprinkle with nutmeg.
  • Bake in hot oven 400 for 25 to 30 minutes or until knife inserted into custard comes out clean.
  • Cool on rack 15 minutes then refrigerate.
