Ingredients
1 c. butter
1/2 c. sugar
1/2 c. brown
sugar
1 c. canned pumpkin
1 egg
2 c. unbleached all purpose flour
1
tsp baking soda
1 tbsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp
salt
Directions
Preheat oven to 350 degrees. In a mixing bowl, cream the sugars and
butter together. Slowly add the vanilla and egg. Stir in the pumpkin, flour,
soda, salt and spices. Drop by tablespoon onto lightly greased cookie sheet.
Bake at 350 for 10 - 12 minutes. Remove from the oven and while the cookies are
still warm, press down lightly on each cookie with the back of a cup to flatten
slightly. Allow to cool before frosting.
FROSTING
1/4 c. heavy
cream
1/2 c. brown sugar
1 c. powdered sugar
1 tsp vanilla
In a
saucepan, heat butter, brown sugar and cream until mixture comes to a rolling
boil. Remove from heat and allow to cool. Once cooled, add the powered sugar
and vanilla. Frost each cookie, allowing frosting to set up before stacking
cookies.
