Ingredients:
3 cups mashed potatoes
1 Tablespoon lemon juice
Cheddar cheese - shredded
Whipping cream (not whipped)
Instructions:
Prepare mashed potatoes as you normally would, adding salt, pepper, and milk as needed. Add the lemon juice.
Place potatoes in oven proof casserole dish having potatoes at least 2 inches thick. And leaving about 2" clear to the top rim of the dish. Sprinkle the top with shredded cheddar cheese. Pour whipping cream over the cheese, covering completely, about 1/4" thick. Bake at 400 degrees until hot and browned.
Can be made ahead and refrigerated. Reheat when ready to serve.
