Rice Pudding

Ingredients:
2/3 cups rice
1/3 cup sugar
5 eggs
5 cups milk - heated
Pinch of salt (how quaint)
1 Tablespoon butter

Instructions:
Cook rice until tender; rinse well.  Warm milk and add butter.  Beat eggs and sugar, then add milk. slowly or you will have scrambled eggs!
Place in a buttered 9x11 casserole dish.  Bake at 325 for 45-55 minutes, or until an inserted butter knife comes out clean.  If it is New Years Eve insert 1 whole almond.  Good luck for the year to the one who finds it.
