Cheesy Chicken with Cauliflower and Broccoli

INGREDIENTS
- 2 tablespoons olive oil
- 1 chicken breast
- 1/2 cups broccoli florets, finely chopped
- 1/2 cups cauliflower florets, finely chopped
- 1 tablespoon lemon juice
- 1/4 cups cheddar cheese, shredded
- 1/8 teaspoons salt
- 1/8 teaspoons pepper
DIRECTIONS
Heat a skillet over medium heat. Add the chicken and cook until browned. Remove from pan and add the broccoli and cauliflower. Season with salt and pepper. Cook until soft and slightly browned. Add the lemon juice, and add the chicken back to the pan. Cook until the chicken is done and top with the cheese. Serve when the cheese is melted.
