Creamy Crab and Vegetable Skillet

INGREDIENTS
- 2 tablespoons olive oil
- 1/4 cups onions, chopped
- 1 garlic, minced
- 1/4 cups red bell peppers, sliced
- 1/4 cups asparagus, chopped
- 1/4 cups mushrooms, sliced
- 2 tablespoons heavy cream
- 1 cup crab meat, cooked, drained
- 2 tablespoons parsley, chopped
- 1/8 teaspoons salt
- 1/8 teaspoons pepper
DIRECTIONS
Heat a skillet over medium heat. Add the olive oil, onions, and garlic. Cook until soft, and add the peppers, asparagus and mushrooms. Season with salt and pepper. When all veggies are tender, stir in the heavy cream and crab. Cook over medium low heat until heated through. Top with the parsley and serve.
