Pork, Apple, and Spinach Skillet
INGREDIENTS
- 1 1/2 tablespoons olive oil
- 4 ounces pork tenderloin, sliced
- 1/4 cups apple, sliced
- 1/4 cups onion, sliced
- 1 tablespoon cider vinegar
- 1 tablespoon dijon mustard
- 1 cup baby spinach
- 1/8 teaspoons salt
- 1/8 teaspoons pepper
DIRECTIONS
Heat the olive oil in a skillet. Add the pork slices and cook until browned. Remove from pan. Add onions and apples to the skillet and cook until soft. Season with salt and pepper and stir in the vinegar and mustard. Stir and add the spinach. When it’s wilted, stir the pork back into the pan and continue cooking until pork is cooked through.
