Appalachian Stack Cake

Appalachian Stack Cake

Mix dry ingredients together
1/2 cup shortening
1/2 cup brown sugar
1/2 cup buttermilk
1/3 cup molasses
1 large egg
1 t. Vanilla

Mix wet ingredients together
.3 1/2 cups flour
1 t. Ginger
1t. Cinnamon
1/2 t. Nutmeg.
.1/2 t. Baking soda
pinch of salt

Place dry ingredients in a large bowl, make a well and stir in wet ingredients. Stir until all are incorporated.

Empty contents onto a floured counter and knead lightly. Form a disk and wrap in plastic wrap and refrigerate for 10 min.

Remove from frig and place on a floured counter. Cut into 6 equal pieces.

Form each piece into an 8" flat disk.

Place each disk om a parchment t covered cookie sheet and bake at 350 for about 10 - 12 min.

Remove from cookie sheet and let cool.

How to make the stack.
Take a disk and place on a cake plate.
Continue to stack layers
Slather om apple bitter (or any flavor, peach, etc) between each layer.
