Baked Oatmeal

 Baked Oatmeal - Breakfast on the Go

INGREDIENTS - 4 eggs - 3/4 cup applesauce - 1 cup Greek yogurt - 1 cup whole milk - 2 tsp vanilla extract - 1/2 cup honey - 6 cups old-fashioned rolled oats - 3 tsp baking soda - 1 tsp salt

Optional :Blueberries, pecans or Apples and walnuts INSTRUCTIONS - Preheat oven to 350°F. Grease a 9×13-inch baking dish and set it aside. - In a large bowl, whisk the eggs. Once whisked, mix in the applesauce. Add the Greek yogurt and milk and whisk to combine. Pour in the vanilla extract and honey. Whisk until smooth. Add the oats, baking soda, and salt. Using a spatula, fold to combine.

I like to add pecans and blue berries or walnuts and apples. Your Choice. - Pour into the prepared baking dish and bake in the preheated oven until the baked oatmeal is golden and set in the middle, 30-40 minutes. Remove from the oven and cool for 10 minutes before slicing.
