Potato with Spinach Rollup

 RECIPE AND INGREDIENTS:

Line jellyroll pan with parchment. Use melted butter to coat the parchment
Layer #1
Parmesan cheese 2 cups grated Potatoes 6 Cut the potatoes into medium thin slices Spread 1/2 cheese evenly on parchment Place potato slices, slightly overlapping on top of cheese Spread the remainder of cheese on top of potatoes. Press the potatoes/cheese tightly to form a solid layer. (This will become the base of your rollup.) Salt well! Bake in a preheated oven at 350°F for 40 minutes.
Mixture #2

Fry until golden brown.
2 yellow onions diced 1 pepper diced add 5 medium Tomatoes cut into medium chunks Salt. Black pepper.
add Smoked paprika 1 teaspoon. Cook for 7-10 minutes.
add Parsley chopped Cook for another 3-5 minutes.

Mixture #3
In another pan, with a little water, reduce a package of baby spinach
Add 3 cloves of pressed garlic. Cook 7-10 minutes until the water has evaporated.
Salt.
Cool spinach.


In a bowl mix Mozzarella shredded 2 cups Ricotta 2 cups Combine mixtures 2 and 3 t blend well
The potatoes are ready. Add your final mixture by spreading evenly over the potatoes.

Using the parchment start rolling up your potatoes like a jelly roll Leave roll on parchment seam side down Bake in a preheated oven at 350°F for 10 minutes.
Remove from oven and slice into portions Serve That's all! That's very delicious! Trust my word! Fantastic!
