Black Bottom Cupcakes

I discovered this recipe while stationed in Germany over 40 years ago.  It has been one of my husband's top favorites.  It also has a nice presentation as a little "tea party" dessert, just make them mini-sized.

Black Bottom Cupcakes Makes 22-24 cupcakes
Mix together - set aside this will be the filling
8 oz. softened cream cheese
1 unbeaten egg
1/3 cup sugar
Pinch of salt
1 bag  of semi-sweet chocolate chips

Cake 
In a bowl,
sift together the flowing

Note I often make batches of the dry ingredients and put them in a gallon zip lock bag then I can just have the dry ingredient ready to use easily

3 cups flour  
2 cups of sugar  
1/2 cup cocoa  
2 teaspoon baking soda  
1 teaspoon salt 

Add to dry ingredient

2 cups strong coffee  cooled

2 teaspoons white vinegar
2/3 cups oil
2 teaspoons vanilla

Fill cupcake papers in a muffin pan 1/2 full.  Drop and push towards bottomin a hearty teaspoon full of the filling mixture.

Bake at 350 for about  22-25 minutes.  Do not over bake
