Easy Shortbread Cookies

Cream together
1/2 lb. butter (2 sticks)
1/2 cup powdered (confectioners) sugar
Mix and add
2 cups flour
1/2 teaspoon vanilla
1/2 teaspoon salt

Instructions:
Pat into 9x9 or 8x11 pan.  Refrigerate for at least 30 minutes.  Poke holes into cookie dough like you would a pie crust.  Sprinkle with granulated white sugar.  Bake at 375 for 5 minutes Reduce heat to 300 and bake for 45 minutes longer.  Cool slightly, cut into squares while still warm, but not hot.  Enjoy!
